Very Veggie Soup

I’m trying to detox and eat lots of veggies to get my energy back up.

My little helper tonight. During the holidays I ate some serious junk (I have a major sweet tooth) and now I feel gross, so I’m trying to detox and eat lots of veggies to get my energy back up. Here’s how to make this super healthy detox soup:

​​​​​​​Use a large pot so you have leftovers and fill it about 1/3 of the way with water. Add a veggie bullion cube and half a jar of your favorite tomato sauce. Turn heat up to medium and add the following in this order…


  • 2 garlic cloves minced
  • 1 bulb fennel chopped
  • 1 onion chopped
  • 1 leek chopped
  • 3 stalks of celery chopped
  • 5 small golden potatoes chopped
  • 4 carrots chopped
  • 1 zucchini chopped
  • 2 cups of chopped tomatoes
  • 1 container of white beans

1. Add in sea salt, Italian dried herbs, freshly cracked pepper (to taste).

​​​​​​​2. After about 10 minutes add in chopped kale and basil, cook just until they begin to wilt and then serve!
